Preserved lemon is made with lemon juice and a lot of salt, which of course is not a big plus when it comes to good health. lf, however, your diet is relatively free of packaged food products and you don’t add salt to your food, automatically you are eating less salt than the average person. That’s my justification anyway to include a small amount of this wonderful condiment in your cooking. When using preserved lemons, discard the fleshy pulp and use the peel only.
4 pieces preserved lemon
2 tablespoons lemon juice
2 cloves garlic
1 teaspoon ground cumin
1 teaspoon sweet paprika
½ cup olive oil
cracked black pepper
¼ bunch cilantro leaves, roughly chopped
2 cilantro roots, washed
4 organic chicken breasts
- Remove the pulp from the preserved lemon and add the rind to a food processor with the lemon juice, garlic, cumin, paprika, oil, pepper, and the cilantro leaves and roots and process until smooth.
- Wipe the chicken breasts with damp paper towel to clean and smear the marinade over each of them.
- Set aside to marinate in the refrigerator for 1-2 hours.
- Preheat barbecue grill
- Cook chicken on the barbecue for approximately 7 minutes each side, turning once.
